Why is Saffron the most expensive spice in the world?

Why is Saffron (also known as saffron crocus) the most expensive spice in the world? This is a very intriguing question that many people within the food community would like to learn about. 

There are many reasons behind this, such as where it is harvested and when it is harvested, which we will be exploring today.   

Saffron is harvested mainly in the Mediterranean, most commonly in places such as: Morocco, Spain or Greece. This is because the plant needs a great amount of sun as well as well drained soil. However Saffron, is a very delicate ingredient, consequently allowing it only to be harvested for a 3 week period in a year (from late October to Mid November.) During this time, farmers are required to work unbelievably hard to harvest the Saffron. 

The rewards for a good harvest are very high, for example in Spain every year, it exports as much as 100 tons of Saffron each year, to give you an idea of the sheer quantity, 1 ton equals 1000kg of Saffron. High quality Saffron, that comes from high quality farms, can be sold for anything from £14 for 0.5g to £28,000 for 1 kilogram, earning it the nickname: Farmers gold.   

Saffron is not as modern as you think, Saffron was discovered about 3,500 years ago, by travellers in the Middle East more specifically Iran. Since then Saffron has expanded all over the world, to different cultures, cuisines and most recently to the Uk, where the heat is increasing, allowing it to accommodate Saffron farms.

If you are a keen chef, like me, I love to cook as much as possible with Saffron. A recipe that I would recommend is Saffron and Chorizo Risotto. This is a very easy meal to create and brilliant for a gathering with friends.
